Green Rice/Arroz Verde
Ingredients
6 large tomatillos
2 tbsp. water
1/3 cup fresh cilantro, minced
4 tsp. seeded jalapeno peppers, minced (optional)
½ tsp. salt
1 clove garlic, minced
1 ¼ cup uncooked rice
Discard husk and stems from the tomatillos.Cook in boiling water until tender--about 5 minutes. Drain and put tomatillos in blender with 2 tbsp. water. Process until smooth. Pour the tomatillo mixture into measuring cup and add water to make 3 cups. Combine tomatillo mixture, cilantro, jalapeno, salt and garlic in saucepan and bring to a boil. Add rice, cover and reduce heat to simmer for 20 minutes or until liquid is absorbed. Remove from heat and fluff with a fork.
Peaches and Cantaloupe Salad/Dulce de Duraazno y Melon
Ingredients
2 lbs. peaches
1 cantaloupe
½ cup water
1 stick of cinnamon
1 teaspoon vanilla extract
2 cups sugar
Peel the peaches and the cantaloupe and cut into quarters. Add to large pot with remaining ingredients and boil until soft. Serve warm or cold.
